Coconut Curry Chicken:

1. Heat the virgin coconut oil in a skillet over medium heat.

2. Saut chopped onions until translucent, then add minced garlic and grated ginger.

3. Stir in curry powder to coat the onions and aromatics with spices.

4. Add chicken pieces and cook until lightly browned on all sides.

5. Pour in coconut milk and chicken broth (or water), bringing the mixture to a simmer.
