Serbuk kari dan penggunaan Bahasa Inggeris kontemporari dengan perkataan "curry" adalah ciptaan Barat dan tidak menunjukkan apa-apa makanan Asia Selatan tertentu, walaupun campuran rempah yang sama yang digunakan di utara Asia Selatan
dipanggil garam masala. Perkataan "kari" berasal daripada perkataan Tamil kari yang bermaksud "sos, kuah untuk nasi". Kebanyakan resipi serbuk kari termasuk ketumbar, kunyit, jintan putih, halba, dan cili dalam campuran mereka. Bergantung kepada resipi, bahan-bahan tambahan seperti halia, bawang putih, asafutida, jintan hitam, jemuju, kulit kayu manis, cengkih, biji sawi, buah pelaga hijau, buah pelaga hitam, pala, lada panjang, dan lada hitam juga boleh dimasukkan. Serbuk kari berkualiti akan mengandungi daun kari.
