Hong Kong Chen Chi Kei Small Slicer (Wooden Handle)#2
The Small Slicer has a long blade with a flat cutting edge. The blade is black on the back and white on the front. It is capable of cutting meat and vegetables and is primarily used for slicing and shredding soft ingredients.
Compared to a chinese slicing knife, the Small Slicer is thinner and lighter. In the final step of preparing a simple steamed sea bass, finely sliced green onions are added. A true connoisseur chef insists on using Southern onions that are as thick as a few toothpicks and cut to approximately one inch in length, resembling strands of hair. Ordinary knives are unable to achieve such fine slices, thus requiring the use of a specialized tool known as a mulberry knife.
